There are many different ways to cook collard greens but this is one of our favorites. Get a couple of fresh bundles of collard greens from your local food stand, or harvest them yourself if you grew them.
Chop them up into long thing strips, about a 1/4 inch across. Remove any large stem material as that can be bitter even after cooking for a long time.
In a crock pot add some chicken stock, pepper, salt, and cayenne pepper to taste.
Stuff the crock pot full, the greens will cook down considerably. Add 4 strips of bacon to the pot, some chopped onion, and if you like a can of kidney beans.
Cook them at least 12 hours on low and they will come out great. A flavorful and spicy mixture that everyone will enjoy.
