Well I thought I would do something interesting last night and tried twice backed avocado stuffed potatoes.
First bake your potatoes at 400 degrees for about an hour or until you can scoop out the insides.
Split them in half and scoop out the meat into a bowl.
Take two large avocados and mash them up into the potato mixture. Salt and Pepper to taste.
Restful the mixture into the empty potato skins.
Bake for 15 minutes at 400 or until warm.
Top with your favorite toppings.
FAIL – Cooking avocados releases an extremely bitter taste. These while looking delicious, were terrible.
